Vegan Cosmic Chocolate Scones
Vegan, Protein-Packed, and Perfectly Chaotic
Bad Bella is back in the kitchen, stirring up some deep-space decadence with these vegan chocolate scones. They’re rich, chocolatey, and packed with protein, thanks to KOS Chocolate Protein Powder. Plus, mini chocolate chips make every bite a tiny portal to deliciousness.
What You’ll Need for This Cosmic Bake:
🌌 Dry Ingredients:
- 2 cups unbleached flour
- 1/3 cup almond flour
- 1/4 cup dark brown sugar
- 1/4 cup KOS Chocolate Protein Powder
- 2 Tbsp cocoa powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
🌌 Wet Ingredients:
- 3/4 cup cold plant butter or cold coconut oil, cubed
- 1 cup plant-based milk (oat or almond work best)
- 1 Tbsp ground flax
- 1 Tbsp chia seeds
- 1 tsp vanilla extract
🌌 Fold-Ins:
- 1 cup chocolate chips (vegan)
How to Make These Scones Without Summoning Chaos:
1. Prepare the Cosmic Egg
In a small bowl, mix the plant-based milk with ground flax and chia seeds. Let it sit for at least 10 minutes until it thickens into a gel. This will help bind the scones together like a glitchy time-loop.
2. Preheat & Line Up
Heat your oven to 400°F (205°C) and line a baking sheet with parchment paper.
3. Mix the Dry Crew
In a large bowl, whisk together flours, sugar, KOS Chocolate Protein Powder, cocoa powder, baking powder, baking soda, and salt.
4. Butter Time
Add cold plant butter (or coconut oil) to the dry ingredients. Use a fork or your hands to work it in until the mixture looks like coarse crumbs.
5. Merge the Dimensions
Pour the chia-flax “egg” mixture and vanilla extract into the dry ingredients. Stir gently until just combined—no overmixing, or the scones might rebel.
6.Fold in the Cosmic Chips
Gently stir in mini chocolate chips until evenly distributed.
7. Shape & Slice
Transfer the dough onto a floured surface and shape it into a 1-inch thick disc. Cut into 12 triangular scones.
8. Bake the Magic
Arrange the scones on the baking sheet and bake for 15–18 minutes, until they’re firm and slightly golden.
9. Cool (or Don’t)
Let the scones cool for a few minutes—but if you sneak a bite fresh from the oven, Bella won’t judge.
Bad Bella’s Chaotic Tips:
✨ Want an extra crunchy top? Brush the scones with a little plant milk and sprinkle with coarse sugar before baking.
✨ Feeling extra cosmic? Drizzle them with melted chocolate after they cool.
✨ Want to glitch it up? Swap half the cocoa powder for matcha and make green-and-brown marbled scones.
These vegan chocolate scones pair perfectly with tea, coffee, or straight-up rebellion.
Note: I do not profit from the promotion of KOS.
Happy baking, space traveler! 🚀✨
